Ingredients
- 1 lb ripe apricots (plus 3–4 chopped for garnish)
- 1 ½ cups heavy whipping cream
- ½ cup whole milk
- ½ cup granulated sugar
- 2 tbsp freshly squeezed lemon juice
Instructions
- Prepare the apricots: Wash and pit the ripe apricots, then chop them into small pieces.
- Blend ingredients: In a mixing bowl, combine chopped apricots, heavy whipping cream, whole milk, sugar, and lemon juice. Whisk until well mixed.
- Churn in ice cream maker: Pour the mixture into your ice cream maker and churn according to the manufacturer's instructions until soft-serve consistency is achieved.
- Freeze: Transfer the ice cream to an airtight container, adding remaining chopped apricots on top. Freeze for at least 4 hours or until firm.
- Serve: Scoop into bowls and garnish with fresh parsley if desired.
