- 4 boneless, skinless chicken breasts
- 4 cups fresh spinach
- 2 cups sliced mushrooms (cremini or button)

- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
- Place chicken breasts in the baking dish; drizzle with olive oil and season with salt, pepper, garlic powder, and Italian seasoning.
- In a skillet over medium heat, sauté sliced mushrooms in olive oil until golden brown; add fresh spinach until just wilted.
- Spread the mushroom-spinach mixture evenly over the chicken in the baking dish.
- Cover with foil and bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (74°C).
- Let rest for a few minutes before serving; drizzle with any remaining juices from the dish.
