  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 28 oz canned crushed tomatoes
  • 4 cups chicken broth
  • 2 cups water
  • 8 oz uncooked lasagna noodles, broken into pieces
  • 15 oz ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil for garnish
  • 2 teaspoons Italian seasoning
  • 1 teaspoon sugar
  • Salt and pepper to taste

Instructions

  1. In a large pot or Dutch oven over medium heat, brown the ground turkey until cooked through, about 5–7 minutes.
  2. Add the chopped onion and sauté for about 3 minutes until translucent. Stir in minced garlic and cook for another minute.
  3. Pour in crushed tomatoes, chicken broth, and water; stir in Italian seasoning and sugar. Season with salt and pepper to taste. Bring to a simmer.
  4. Add broken lasagna noodles and cook according to package instructions until al dente (10–12 minutes).
  5. While noodles cook, mix ricotta cheese with half of the shredded mozzarella and Parmesan cheese in a bowl.
  6. Once noodles are cooked, stir in the cheese mixture until well combined.
  7. Serve hot in bowls and top with remaining mozzarella cheese and fresh basil.
