- 1 cup cooked quinoa
- ½ cup whole wheat breadcrumbs
- 2 large eggs
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil (for cooking)
- Salt and pepper to taste
Instructions
- Cook quinoa according to package instructions; rinse and boil in two cups of water until fluffy.
- In a skillet, heat 1 tbsp olive oil over medium heat; sauté onions and garlic until soft (about 5 minutes).
- In a large bowl, combine cooked quinoa, sautéed vegetables, breadcrumbs, eggs, salt, and pepper; mix well.
- Shape mixture into small patties (about 3 inches wide) and place on a parchment-lined baking sheet.
- Heat remaining olive oil in a non-stick skillet over medium heat; fry each patty for 3-4 minutes per side until golden brown.
- Serve warm with your favorite dipping sauce or salad.
