Ingredients
- 1 pound ditalini pasta
- 1 red or green bell pepper, diced
- 1/4 cup diced red onion
- 2 stalks celery, diced
- 1 cup English cucumber, diced
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon red apple vinegar
- 1 tablespoon sugar
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
Instructions
- Boil a large pot of water with salt. Add ditalini pasta and cook according to package directions.
- Drain pasta in a colander and rinse under cold water to cool.
- In a mixing bowl, whisk together mayonnaise, red apple vinegar, sugar, Dijon mustard, salt, black pepper, garlic powder, and paprika until smooth.
- In a large bowl, combine cooled pasta with chopped vegetables.
- Pour dressing over the pasta mixture and toss gently to coat.
- Chill in the refrigerator before serving to let flavors meld.
