Ingredients
- 1 cup plain Greek yogurt
- 1/2 English cucumber (diced)
- 2 teaspoons olive oil
- 3 tablespoons fresh lemon juice
- 1 tablespoon minced garlic
- 1/4 cup fresh chopped dill
- Salt and pepper to taste
Instructions
- Prepare the cucumber by placing the diced pieces in a strainer over a bowl and sprinkling with salt. Let it sit for a few minutes to draw out excess moisture. Pat dry with a paper towel.
- In a mixing bowl, combine Greek yogurt, strained cucumber, olive oil, lemon juice, minced garlic, chopped dill, salt, and pepper. Mix until smooth.
- Garnish with extra dill and serve chilled alongside pita chips or fresh vegetables.
