  • 1/2 cup Dutch processed cocoa powder
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 8 tbsp unsalted butter for the toffee sauce
  • 3/4 cup brown sugar for the toffee sauce
  • 1 cup cream for the toffee sauce
  • 1 cup milk for the toffee sauce
  • 200g dark chocolate (60-70%) for the toffee sauce
  • 1/2 tsp salt for the toffee sauce
  • Optional: 1-2 tbsp cocoa powder for extra flavor

Instructions

  1. Combine chopped dates with boiling water in a bowl and soak for about 10 minutes until soft.
  2. In another bowl, whisk together boiling milk, softened butter, brown sugar, vanilla extract, and eggs until smooth.
  3. In a separate bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt.
  4. Gradually mix dry ingredients into the wet mixture until well combined. Stir in soaked dates along with their water.
  5. Pour batter into a greased baking dish and bake in a preheated oven at 350°F (175°C) for about 25 minutes or until a toothpick comes out clean.
  6. While baking, prepare the sauce by melting butter, brown sugar, cream, milk, dark chocolate, and salt in a saucepan over low heat until smooth.
