Ingredients
- 2 medium zucchini
- 1 large sweet onion
- 1 large red bell pepper
- 1/2 cup Italian salad dressing
- Salt and fresh ground black pepper (to taste)
- Fresh parsley (for garnish)
Instructions
- Cut zucchini into half-lengthwise pieces and slice them into 2-inch segments.
- Peel and slice the onion into individual layers.
- Halve the bell pepper, remove seeds, and cut into similar-sized pieces as the other vegetables.
- Combine all chopped veggies in a Ziploc bag with Italian dressing. Seal and marinate in the fridge for 4-6 hours.
- Preheat your grill pan on medium-high heat.
- Drain excess marinade from the vegetables and spread them evenly on the preheated grill pan.
- Grill for about 15-20 minutes, stirring every five minutes until tender with slight char marks.
- Serve hot, seasoned with salt and pepper, garnished with chopped parsley.
