Instructions

  1. Cut zucchini into half-lengthwise pieces and slice them into 2-inch segments.
  2. Peel and slice the onion into individual layers.
  3. Halve the bell pepper, remove seeds, and cut into similar-sized pieces as the other vegetables.
  4. Combine all chopped veggies in a Ziploc bag with Italian dressing. Seal and marinate in the fridge for 4-6 hours.
  5. Preheat your grill pan on medium-high heat.
  6. Drain excess marinade from the vegetables and spread them evenly on the preheated grill pan.
  7. Grill for about 15-20 minutes, stirring every five minutes until tender with slight char marks.
