  • Total Time: 40 minutes
  • Yield: Approximately 6 servings 1x

Ingredients

Scale
  • 1 pound ground turkey sausage
  • 3 large carrots, peeled and chopped
  • 2 ribs celery, finely chopped
  • 1 medium onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 4 cloves garlic, minced
  • 7 cups low-sodium chicken broth
  • 1½ cups dry ditalini pasta
  • 1 cup fresh spinach, chopped

Instructions

  1. In a large soup pot or Dutch oven, cook the ground turkey sausage with carrots, celery, onion, and red bell pepper over medium-high heat until the sausage is browned and the onion is translucent (about 5 minutes).
  2. Add minced garlic and Italian seasoning; cook for an additional minute.
  3. Pour in the chicken broth and scrape the bottom of the pot to release any stuck bits for extra flavor.
  4. Bring to a simmer, cover, and cook for about 10 minutes until vegetables are nearly tender.
  5. Stir in the ditalini pasta; cover and cook for another 10 minutes until pasta is al dente.
  6. Finally, mix in the chopped spinach; taste and adjust seasonings as needed before serving.
