- 1 pound ground turkey sausage
- 3 large carrots, peeled and chopped
- 2 ribs celery, finely chopped
- 1 medium onion, finely chopped
- 1 red bell pepper, finely chopped
- 4 cloves garlic, minced
- 7 cups low-sodium chicken broth
- 1½ cups dry ditalini pasta
- 1 cup fresh spinach, chopped
Instructions
- In a large soup pot or Dutch oven, cook the ground turkey sausage with carrots, celery, onion, and red bell pepper over medium-high heat until the sausage is browned and the onion is translucent (about 5 minutes).
- Add minced garlic and Italian seasoning; cook for an additional minute.
- Pour in the chicken broth and scrape the bottom of the pot to release any stuck bits for extra flavor.
- Bring to a simmer, cover, and cook for about 10 minutes until vegetables are nearly tender.
- Stir in the ditalini pasta; cover and cook for another 10 minutes until pasta is al dente.
- Finally, mix in the chopped spinach; taste and adjust seasonings as needed before serving.
