Ingredients

  • 10.5 cups water or organic unsalted vegetable broth
  • 1 yellow onion
  • 2 celery ribs
  • 3 carrots
  • 4 garlic cloves
  • Salt (to taste)
  • 1 cup pastina (or small pasta shape)
  • Grated Parmigiano (for garnish)

Instructions

  1. In a large pot, combine water or broth with halved onion, celery, carrots, garlic, and salt. Bring to a boil.
  2. Reduce heat to medium-low and simmer for about 45 minutes until veggies are very soft. Adjust seasoning.
  3. Transfer cooked veggies to a blender with some broth and blend until smooth. Return to pot.
  4. In a small pot, cook pastina according to package instructions until al dente.
  5. Serve by placing pastina in bowls and ladling hot broth over it. Garnish with grated Parmigiano.
