- 1 lb Italian sausage (links or loose)
- 2 medium sweet potatoes (about 1 lb), cubed
- 2 tbsp extra virgin olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- 1 bell pepper, chopped (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a bowl, toss the cubed sweet potatoes and bell pepper with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
- Add the sausage to the bowl and mix well.
- Spread the mixture on the prepared baking sheet in a single layer.
- Bake for 25-30 minutes or until the sausage reaches an internal temperature of 165°F and sweet potatoes are tender. Stir halfway through cooking for even browning.
