  • 4 large bell peppers
  • 1 lb lean ground turkey
  • 1 cup chopped onion
  • 1/2 tablespoon minced garlic
  • 2 tablespoons taco seasoning
  • 1 cup corn (Mexicorn or roasted)
  • 1 cup canned black beans
  • 2 cups tomato salsa
  • 1 cup cooked brown rice
  • 1 cup shredded cheese

Instructions

  1. Preheat the oven to 350°F. Slice bell peppers in half lengthwise, remove seeds, and place them in a greased baking dish. Bake for 15 minutes.
  2. In a skillet over medium-high heat, heat olive oil and cook ground turkey until browned. Stir in onions, garlic, taco seasoning, corn, black beans, salsa, and brown rice; simmer for about 2 minutes.
  3. Stuff each pepper half with the filling and top with shredded cheese. Bake for an additional 15 minutes until cheese is melted.
  4. Serve warm topped with sour cream, salsa, cilantro, lime slices, and avocado.
