- 2 large hard-boiled eggs, sliced
- 2 cups romaine lettuce, chopped
- 1 cup grated carrot
- 1 cup fresh mushrooms, sliced
- 1 tbsp olive oil
- 1 tsp dried oregano or mixed herbs
- Salt and freshly cracked black pepper, to taste
Instructions
- Boil eggs for 9-10 minutes until fully cooked. Cool under cold water, peel, and slice.
- In a mixing bowl, layer chopped romaine lettuce as the base. Add grated carrot and sliced mushrooms.
- Place sliced hard-boiled eggs on top.
- Drizzle with olive oil and sprinkle with oregano, salt, and pepper. Toss lightly or serve as is.
