  • 1 fryer chicken (broken into 6 or 8 pieces)
  • 1/4 cup unsalted butter (softened)
  • 3 cloves garlic (minced)
  • 3 sprigs rosemary (destemmed and minced)
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1/2 cup balsamic vinegar
  • 1/2 cup fig preserves
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 425°F (218°C).
  2. In a small bowl, mix softened butter with half of the garlic, rosemary, salt, and pepper.
  3. Rub the butter mixture all over the chicken pieces in a cast iron skillet.
  4. Begin roasting chicken in the preheated oven.
  5. In another bowl, whisk together balsamic vinegar, fig preserves, remaining garlic, rosemary, salt, and pepper.
  6. After 10 minutes of roasting, brush most of the glaze onto each chicken piece and continue cooking while basting every 10 minutes.
  7. Cook until internal temperature reaches 165°F (74°C), about 25 minutes total.
  8. Pour any remaining glaze over the chicken before serving.
