- 1 fryer chicken (broken into 6 or 8 pieces)
- 1/4 cup unsalted butter (softened)
- 3 cloves garlic (minced)
- 3 sprigs rosemary (destemmed and minced)
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- 1/2 cup balsamic vinegar
- 1/2 cup fig preserves
- Fresh parsley for garnish
Instructions
- Preheat the oven to 425°F (218°C).
- In a small bowl, mix softened butter with half of the garlic, rosemary, salt, and pepper.
- Rub the butter mixture all over the chicken pieces in a cast iron skillet.
- Begin roasting chicken in the preheated oven.
- In another bowl, whisk together balsamic vinegar, fig preserves, remaining garlic, rosemary, salt, and pepper.
- After 10 minutes of roasting, brush most of the glaze onto each chicken piece and continue cooking while basting every 10 minutes.
- Cook until internal temperature reaches 165°F (74°C), about 25 minutes total.
- Pour any remaining glaze over the chicken before serving.
