- 1 pound Italian sausage links
- 2 medium sweet potatoes (about 1 pound), peeled and cubed
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 3 tablespoons honey
- 2 tablespoons low-sodium soy sauce
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a bowl, combine sweet potato cubes and sausage links. Drizzle with olive oil, salt, and pepper; toss to coat.
- Spread the mixture evenly on the baking sheet. Roast for about 25 minutes until sweet potatoes are tender.
- While roasting, whisk together minced garlic, honey, soy sauce, and a splash of water in a small bowl.
- After 25 minutes, drizzle the honey garlic sauce over the ingredients; toss gently to coat.
- Return to the oven for an additional 10-15 minutes until everything is caramelized.
