- 2 medium zucchini (about 400g)
- 1 lb boneless skinless chicken breasts (450g), diced
- 3 cloves fresh garlic, minced
- 2 tbsp sesame oil
- 3 tbsp low-sodium soy sauce
- 2 tbsp toasted sesame seeds (for topping)
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a baking sheet.
- Halve the zucchinis lengthwise and scoop out some flesh to create space for filling.
- Heat sesame oil in a skillet over medium heat, sautéing minced garlic until fragrant.
- Add diced chicken and cook until browned, about 6-8 minutes.
- Mix in soy sauce and stir until chicken is well coated.
- Fill each zucchini half with the chicken mixture and place on the baking sheet.
- Bake for 15-20 minutes until zucchinis are tender. Top with toasted sesame seeds before serving.
