Ingredients
- 2 cups almond flour
- 2 whole oranges
- ⅔ cup honey
- 3 large eggs
- ½ teaspoon baking soda
- 1 cup ground pistachios
- 1 teaspoon vanilla extract
- 2 tablespoons honey (for glaze)
- ½ cup fresh orange juice (for glaze)
Instructions
- Prepare the oranges by rinsing them and boiling in water for one hour.
- Blend the boiled oranges until smooth.
- Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
- In a mixing bowl, combine blended oranges, honey, eggs, almond flour, ground pistachios, baking soda, and vanilla extract until smooth.
- Pour the mixture into the prepared pan and bake for about an hour or until a toothpick comes out clean.
- For the glaze, heat honey and orange juice in a small pot until reduced by half; let cool.
- Once cooled, brush the glaze over the cake and allow it to set before serving.
