Instructions
- In a large pot over medium heat, melt 2 tbsp butter. Add minced garlic and chopped onion; sauté until golden brown, about 5 minutes.
- Pour in the low-sodium vegetable broth and bring to a gentle simmer. Cook for 15 minutes to meld flavors.
- Use an immersion blender or standard blender to blend the soup until smooth.
- Stir in the heavy cream and season with salt and pepper to taste.
- Toast the sliced baguette until golden brown for dipping.
- Serve warm, optionally garnished with croutons or fresh herbs.
