Ingredients
- 3 cups thinly sliced broccoli stems
- 2 cups small broccoli pieces
- 1 cup thinly sliced carrots
- 1 cup shredded red cabbage
- 1/4 cup finely sliced red onion
- 1/2 cup toasted almond slices
- 1/3 cup dried cranberries
- Dressing of choice (homemade coleslaw dressing recommended)
Instructions
- Wash and slice all vegetables: broccoli, carrots, and red onion.
- In a large mixing bowl, combine the sliced vegetables.
- Gently fold in toasted almonds and dried cranberries (reserve some for garnish).
- In a separate bowl, whisk together your dressing until smooth.
- Drizzle the dressing over the salad mixture and toss until coated.
- Serve in a dish garnished with reserved almonds, cranberries, and chopped parsley.
