  • 1 egg
  • 1 cup panko breadcrumbs
  • 1 cup cooked corn

  • Oil for frying

Instructions

  1. Prepare the coating by mixing flour, smoked paprika, salt, and pepper on one plate. Whisk the egg in a bowl. Place panko breadcrumbs on another plate.
  2. Slice tomatoes into thick rounds and coat each slice first in the flour mixture, then in the egg wash, and finally in panko breadcrumbs.
  3. Mix corn salsa ingredients (corn, feta, jalapeño, red onion, cilantro) in a bowl; set aside.
  4. Heat oil in a skillet over medium-high heat. Fry tomato slices until golden brown on both sides (about 1 minute per side). Drain on paper towels.
  5. Top each fried tomato slice with corn salsa and serve immediately.
