- 2 large beefsteak or heirloom tomatoes
- 1/4 cup all-purpose flour
- 1 egg
- 1 cup panko breadcrumbs
- 1 cup cooked corn
- 1/4 cup feta cheese
- 1/2 jalapeño (sliced)
- Fresh herbs (cilantro and parsley)
- Oil for frying
Instructions
- Prepare the coating by mixing flour, smoked paprika, salt, and pepper on one plate. Whisk the egg in a bowl. Place panko breadcrumbs on another plate.
- Slice tomatoes into thick rounds and coat each slice first in the flour mixture, then in the egg wash, and finally in panko breadcrumbs.
- Mix corn salsa ingredients (corn, feta, jalapeño, red onion, cilantro) in a bowl; set aside.
- Heat oil in a skillet over medium-high heat. Fry tomato slices until golden brown on both sides (about 1 minute per side). Drain on paper towels.
- Top each fried tomato slice with corn salsa and serve immediately.
