- 8 cherry tomatoes, quartered

- 70g crumbled feta cheese
- Oil spray for greasing
Instructions
- Preheat the oven to 180C/350F.
- Grease a six-cup muffin tin with oil spray.
- In a mixing bowl, whisk together the eggs, salt, and pepper until frothy.
- Stir in spinach, bell pepper, cherry tomatoes, shallots, and feta until well mixed.
- Divide the mixture evenly among muffin cups.
- Bake for about 20 minutes until lightly golden on top and springs back when touched.
