Ingredients
- 8 ounces crushed pineapple (not drained)
- ½ cup sugar
- 3 ounces lime Jell-O (or orange Jell-O)
- ½ pint whipping cream
- 1 cup sour cream
- 2 tablespoons fresh parsley (for garnish)
Instructions
- In a saucepan, combine crushed pineapple and sugar; bring to a rolling boil. Remove from heat.
- Stir in lime Jell-O until completely dissolved; let cool.
- Whip the whipping cream in a separate bowl until soft peaks form.
- Fold sour cream into the whipped cream gently.
- Combine whipped mixture with cooled Jell-O mix and blend well.
- Pour into a lined 9 x 5-inch loaf pan; cover with foil and freeze for at least 4-6 hours or overnight.
- To serve, let sit for 5 minutes before slicing.
