- 1 tablespoon vanilla extract
- 1⅓ cups buttermilk (room temperature)
- 7 large egg whites (room temperature)
- ⅔ cup rainbow jimmies
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round baking pans.
- In a large mixing bowl, whisk together flour, baking powder, and salt; set aside.
- In another bowl, cream together softened butter, vegetable oil, and granulated sugar until light and fluffy.
- Add vanilla extract and egg whites to the creamed mixture; mix until well combined. Gradually add buttermilk while mixing.
- Slowly incorporate dry ingredients into wet mixture until just combined; gently fold in rainbow jimmies.
- Divide batter evenly between prepared pans and bake for about 30–35 minutes or until a toothpick comes out clean.
- Allow cakes to cool in pans for 10 minutes before transferring to a cooling rack.
