  • ¾ cup granulated sugar (150g)
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • ½ cup sprinkles (jimmies)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, cornstarch, baking soda, and salt.
  3. In a stand mixer, cream the butter and sugar until light and fluffy. Add the egg and vanilla; mix well.
  4. Gradually add the dry ingredients to the wet mixture until just combined. Gently fold in the sprinkles.
  5. Portion the dough into tablespoon-sized balls and place them on baking sheets lined with parchment paper.
  6. Chill the dough balls for at least an hour before baking.
  7. Bake for about 11 minutes until the edges are set but centers remain soft.
  8. Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
