- 1 ½ cups all-purpose flour (180g)
- 1 Tbsp cornstarch
- ½ tsp baking soda
- ½ tsp salt
- ½ cup unsalted butter (113g), room temperature
- ¾ cup granulated sugar (150g)
- 1 large egg, room temperature
- 1 tsp vanilla extract
- ½ cup sprinkles (jimmies)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together flour, cornstarch, baking soda, and salt.
- In a stand mixer, cream the butter and sugar until light and fluffy. Add the egg and vanilla; mix well.
- Gradually add the dry ingredients to the wet mixture until just combined. Gently fold in the sprinkles.
- Portion the dough into tablespoon-sized balls and place them on baking sheets lined with parchment paper.
- Chill the dough balls for at least an hour before baking.
- Bake for about 11 minutes until the edges are set but centers remain soft.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
