Ingredients
- 2 cups broccoli florets
- 2 cups cauliflower florets
- 2 cups sliced carrots
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 4 cloves garlic, minced
- 3 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and chop all vegetables into bite-sized pieces.
- In a bowl, mix olive oil, minced garlic, oregano, thyme, salt, and pepper.
- Toss chopped vegetables in the marinade until well coated.
- Spread the veggies on a baking sheet in a single layer.
- Roast for 25-30 minutes, stirring halfway through for even cooking.
