Ingredients
- 2.5 lbs Yukon Gold potatoes
- 2 cups chicken broth (or vegetable broth)
- ½ cup olive oil
- ½ cup lemon juice
- 5 cloves garlic (minced)
- 1 tbsp dried oregano
- ½ tbsp paprika
- 1 tbsp salt
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cut the Yukon Gold potatoes into thick wedges or cubes.
- In a mixing bowl, combine the potatoes with chicken or vegetable broth, olive oil, lemon juice, minced garlic, dried oregano, paprika, and salt. Toss until evenly coated.
- Transfer the mixture to a roasting pan and cover tightly with aluminum foil. Roast for 40 minutes.
- After 40 minutes, remove from the oven, toss the potatoes again, cover, and continue roasting for another 25 minutes until fork-tender.
- Remove the foil and roast uncovered for an additional 15 minutes until golden brown.
- Serve on a platter and drizzle with any remaining liquid if desired.
