  • 2.5 lbs Yukon Gold potatoes
  • 2 cups chicken broth (or vegetable broth)
  • ½ cup olive oil
  • ½ cup lemon juice
  • 5 cloves garlic (minced)
  • 1 tbsp dried oregano
  • ½ tbsp paprika
  • 1 tbsp salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cut the Yukon Gold potatoes into thick wedges or cubes.
  3. In a mixing bowl, combine the potatoes with chicken or vegetable broth, olive oil, lemon juice, minced garlic, dried oregano, paprika, and salt. Toss until evenly coated.
  4. Transfer the mixture to a roasting pan and cover tightly with aluminum foil. Roast for 40 minutes.
  5. After 40 minutes, remove from the oven, toss the potatoes again, cover, and continue roasting for another 25 minutes until fork-tender.
  6. Remove the foil and roast uncovered for an additional 15 minutes until golden brown.
  7. Serve on a platter and drizzle with any remaining liquid if desired.
