Ingredients
- 1 cup crumbled feta cheese
- 1/2 cup green olives, pitted and halved
- 1/4 cup extra virgin olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- 1 small garlic clove, minced
Instructions
- In a food processor, combine the crumbled feta cheese, minced garlic, lemon juice, and half of the olive oil. Blend until smooth and creamy. If necessary, add more olive oil or a teaspoon of water to achieve your desired consistency.
- Add the remaining green olives (reserving a few for garnish) to the processor and pulse until they are slightly broken down but still retain some texture.
- Transfer the dip to a serving bowl. Drizzle with remaining olive oil, sprinkle with dried oregano and black pepper, and garnish with reserved olives.
- Serve with toasted bread or veggies for dipping.
