  • 4 large boneless skin-on chicken breast halves
  • 3 tablespoons finely minced garlic
  • 1 teaspoon kosher salt
  • ½ cup chopped fresh basil
  • ¼ cup extra virgin olive oil
  • Olive oil, salt, and freshly ground black pepper for seasoning

Instructions

  1. In a bowl, mix minced garlic, kosher salt, chopped basil, and olive oil until paste-like.
  2. Generously smear the marinade on both sides of the chicken breasts and refrigerate in a zip lock bag for 4 to 12 hours.
  3. Preheat the grill to medium heat.
  4. Remove chicken from the bag, wipe off excess marinade from the skin side, then brush with olive oil and season with salt and pepper.
  5. Grill skin-side down for 8–10 minutes; turn for crosshatch marks.
  6. Flip chicken over and cook for another 8–10 minutes until internal temperature reaches 155 degrees F.
  7. Allow resting for 5 minutes before serving.
