Ingredients
- 2 pounds boneless skinless chicken breasts
- 2 cups cherry tomatoes
- 1/2 cup mozzarella balls
- 8 ounces burrata cheese
- 2/3 cup basil pesto
- 1/3 cup balsamic vinegar
- 2 tablespoons extra virgin olive oil
- 3 tablespoons honey
- 2 tablespoons lemon juice
- Kosher salt
- Black pepper
- Chili flakes
Instructions
- In a glass jar, mix together the pesto, balsamic vinegar, honey, lemon juice, salt, pepper, and chili flakes. Shake well.
- Toss chicken chunks with half the vinaigrette and olive oil; season tomatoes with olive oil, salt, and pepper.
- Thread chicken and tomatoes onto skewers.
- Preheat grill to medium-high heat and grill skewers for 10-12 minutes until cooked through.
- Serve skewers over mozzarella balls and burrata; drizzle with remaining vinaigrette.
