Ingredients
- 3–4 boneless skinless chicken breasts
- 8 cups chopped romaine or mixed greens
- 1 large avocado, sliced
- 3/4 cup cherry tomatoes, halved
- 8 slices turkey bacon, cooked and crumbled
- 6 hard-boiled eggs, sliced
- 3 Tbsp raw honey (melted if solid)
- 1/4 cup dijon mustard
- 2 Tbsp fresh lemon juice or white vinegar
- 1/4 cup avocado oil
- 1/4 tsp sea salt
- 1 tsp sea salt (for seasoning chicken)
- 1/2 tsp black pepper (for seasoning chicken)
- 1/2 tsp garlic powder (for seasoning chicken)
- 1/2 tsp onion powder (for seasoning chicken)
- 1 Tbsp avocado oil (for the grill or pan)
- 2 tablespoons fresh parsley, finely chopped (for garnish)
Instructions
- In a mixing bowl, whisk together melted raw honey, dijon mustard, lemon juice or vinegar, avocado oil, and sea salt to create the dressing.
- Season chicken breasts with sea salt, black pepper, garlic powder, and onion powder.
- Grill seasoned chicken over medium-high heat for about 6-7 minutes per side until fully cooked. Let rest before slicing.
- In a large bowl, combine chopped greens, cherry tomatoes, red onion, cucumber slices, avocado, turkey bacon, and hard-boiled eggs.
- Drizzle honey dijon dressing over the salad just before serving and toss gently.
