  • 1 cup chopped iceberg lettuce
  • Cucumber, chopped
  • Red bell pepper, diced
  • 1 small sweet potato, thinly sliced
  • 1 tsp olive oil
  • 1 tsp smoked paprika or chili powder
  • Salt to taste
  • 2 hard-boiled eggs, peeled and halved

Instructions

  1. Preheat oven to 400°F (200°C). Toss sweet potato slices with olive oil and seasonings; roast for 20-25 minutes until crisp.
  2. Season chicken strips with olive oil and spices; grill or pan-sear for 4-5 minutes on each side until fully cooked.
  3. Boil eggs for 9-10 minutes; cool in cold water before peeling.
  4. In a bowl, mix lettuce, cucumber, and bell pepper. Serve topped with chicken, sweet potatoes, and halved eggs.
