Ingredients
- 8 lamb chops
- ¼ cup olive oil
- ½ lemon (zested and juiced)
- 2 garlic cloves (minced)
- 1 tablespoon fresh mint (finely chopped)
- ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- Garnish: 2 tablespoons fresh parsley (finely chopped)
Instructions
- In a large shallow glass dish, combine olive oil, lemon zest, lemon juice, garlic, mint, salt, and pepper to create the marinade.
- Add the lamb chops to the marinade, turning to coat evenly. Cover and let marinate at room temperature for one hour.
- Preheat your grill pan or outdoor grill to medium-high heat (375°F to 400°F).
- Remove the lamb chops from the marinade and place them on the grill. Cook for about 3 minutes on one side.
- Flip the chops and continue grilling for another 3-5 minutes until the internal temperature reaches 135°F for medium-rare.
- Remove from heat and let rest for 5 minutes before serving.
