  • 1/2 cup white sugar
  • 1 stick unsalted butter (softened)
  • 2 cups confectioner’s sugar
  • 2 tbsp milk
  • purple gel food coloring
  • black decorating frosting

Instructions

  1. Preheat your oven to 200°F and line a baking sheet with parchment paper.
  2. In a large bowl, beat room temperature egg whites with cream of tartar using an electric mixer until frothy.
  3. Gradually add sugar while increasing mixer speed to high, beating until bright white and semi-stiff peaks form.
  4. Pipe meringue into ghost shapes on the prepared baking sheet and bake for 2 hours; turn off the oven and leave meringues inside for an additional 30 minutes to cool.
  5. For the buttercream frosting, mix softened butter, confectioner’s sugar, and milk until smooth; tint with purple gel food coloring.
  6. Frost cooled cupcakes generously with purple buttercream and top each with a meringue ghost, adding eyes and mouths with black decorating frosting.
