  • 8 oz walnuts
  • 15 small jarred cherries
  • 1 1/4 lbs mixed crystallized fruits
  • 12 oz pitted dates
  • 3 oz raisins
  • 2 oz diced pineapple
  • 1 cup all-purpose flour
  • 2/3 cup granulated sugar
  • 1/2 cup butter
  • 2 eggs
  • 1 teaspoon baking powder
  • 3/4 teaspoon ground allspice
  • 3/4 teaspoon ground cloves
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup dark corn syrup
  • 1/8 cup juice from the canned pineapple and jarred cherries

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a bundt pan.
  2. In a bowl, mix flour, baking powder, spices, and salt.
  3. In another bowl, cream butter and sugar until fluffy. Add eggs one at a time followed by the corn syrup and fruit juice.
  4. Gradually mix dry ingredients into wet ingredients. Fold in nuts and dried fruits.
  5. Pour batter into prepared bundt pan and bake for about 60 minutes or until a toothpick comes out clean.
  6. Let cool before transferring to a wire rack.
