Ingredients
- 8 oz pecans
- 8 oz walnuts
- 15 small jarred cherries
- 1 1/4 lbs mixed crystallized fruits
- 12 oz pitted dates
- 3 oz raisins
- 2 oz diced pineapple
- 1 cup all-purpose flour
- 2/3 cup granulated sugar
- 1/2 cup butter
- 2 eggs
- 1 teaspoon baking powder
- 3/4 teaspoon ground allspice
- 3/4 teaspoon ground cloves
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 cup dark corn syrup
- 1/8 cup juice from the canned pineapple and jarred cherries
Instructions
- Preheat your oven to 350°F (175°C) and grease a bundt pan.
- In a bowl, mix flour, baking powder, spices, and salt.
- In another bowl, cream butter and sugar until fluffy. Add eggs one at a time followed by the corn syrup and fruit juice.
- Gradually mix dry ingredients into wet ingredients. Fold in nuts and dried fruits.
- Pour batter into prepared bundt pan and bake for about 60 minutes or until a toothpick comes out clean.
- Let cool before transferring to a wire rack.
