  • 8 oz bowtie pasta
  • 1 English cucumber
  • 10 oz cherry tomatoes
  • 1 green pepper
  • 1/2 red onion
  • 5 oz kalamata olives
  • 3 tbsp fresh parsley
  • 8 oz feta cheese
  • 1/3 cup olive oil
  • 1/3 cup water
  • 3 tbsp red apple vinegar
  • 1/2 lemon, juiced
  • 2 tbsp honey
  • 2 tsp dijon mustard
  • 3 garlic cloves, minced
  • 2 tbsp fresh dill
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Cook the bowtie pasta according to package instructions until al dente. Drain and rinse under cold water; set aside.
  2. In a large mixing bowl, combine sliced cucumber, halved cherry tomatoes, chopped green pepper, red onion, kalamata olives, and cubed feta.
  3. In a separate bowl, whisk together olive oil, water, red apple vinegar, lemon juice, honey, Dijon mustard, minced garlic, parsley, dill, salt, and pepper.
  4. Add the cooked pasta to the vegetable mixture. Pour the vinaigrette over everything and toss gently until well combined.
  5. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
