Ingredients
- 2 medium zucchinis
- 1 medium onion
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- 1 tablespoon vegetable oil
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon sesame seeds
- Salt and black pepper to taste
Instructions
- Slice the zucchinis into sticks (about half an inch square and 2-3 inches long) and cut the onion into quarters, then slice into half-inch pieces.
- Heat a sauté pan or wok over medium-high heat. Add vegetable oil until it shimmers.
- Sauté the sliced onion for about 2 minutes until softened.
- Add minced garlic and ginger, stirring for about 30 seconds.
- Add zucchini sticks and sauté for another 4-5 minutes until they brown slightly.
- Pour in soy sauce and sesame oil, seasoning with salt, black pepper, and sesame seeds. Sauté for an additional minute until well-coated.
- Serve immediately alongside your favorite protein.
