Ingredients
- 1 ¼ cups cake flour
- ½ cup granulated sugar (for flour mixture)
- 1 ½ cups egg whites (about 12)
- ¼ teaspoon salt
- 1 ¼ teaspoon cream of tartar
- ¼ teaspoon clear vanilla extract
- 1 teaspoon almond extract
- 1 ⅓ cups granulated sugar (for egg whites)
Instructions
- Preheat your oven to 375°F.
- Sift together cake flour and ½ cup sugar four times for aeration.
- In a metal bowl, whip egg whites, salt, cream of tartar, vanilla, and almond extract until soft peaks form.
- Gradually add 1 ⅓ cups sugar in four additions, blending after each.
- Gently fold in the flour mixture in four additions.
- Pour batter into an ungreased tube pan without scraping the sides.
- Bake for 30–35 minutes; cool upside down.
