  • 1 ½ cups heavy cream
  • ½ cup butter
  • 5 cloves garlic, finely minced
  • 1 tbsp chopped fresh thyme
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste
  • 1 tsp cornstarch
  • ⅓ cup fresh parmesan cheese, grated

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together heavy cream, minced garlic, chopped thyme, cornstarch, salt, and pepper until well combined.
  3. In a baking dish, layer half of the sliced sweet potatoes evenly and pour half of the creamy sauce over them.
  4. Repeat with another layer of sweet potatoes and pour the remaining sauce on top.
  5. Cover with aluminum foil and bake for 30 minutes. Remove foil, add parmesan cheese on top, and bake uncovered for another 10 minutes until golden brown.
