Ingredients
- 3 lb sweet potatoes, peeled and sliced thin (about 1/8-inch thick)
- 1 ½ cups heavy cream
- ½ cup butter
- 5 cloves garlic, finely minced
- 1 tbsp chopped fresh thyme
- Kosher salt, to taste
- Freshly cracked black pepper, to taste
- 1 tsp cornstarch
- ⅓ cup fresh parmesan cheese, grated
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, whisk together heavy cream, minced garlic, chopped thyme, cornstarch, salt, and pepper until well combined.
- In a baking dish, layer half of the sliced sweet potatoes evenly and pour half of the creamy sauce over them.
- Repeat with another layer of sweet potatoes and pour the remaining sauce on top.
- Cover with aluminum foil and bake for 30 minutes. Remove foil, add parmesan cheese on top, and bake uncovered for another 10 minutes until golden brown.
- Let cool slightly before serving and enjoy!
