Ingredients
- 2 cups cauliflower florets
- 1 tablespoon olive oil
- 1 tablespoon honey
- 1 teaspoon curry powder
- Salt and pepper to taste
- 4 oz halloumi cheese, sliced
- 1 cup canned chickpeas, rinsed and dried
- 1 teaspoon paprika
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, toss cauliflower florets with olive oil, honey, curry powder, salt, and pepper until well-coated.
- Spread the cauliflower on a baking sheet and roast for about 20 minutes until golden brown.
- While the cauliflower roasts, coat the chickpeas in paprika and a little olive oil; roast alongside the cauliflower or pan-fry until crunchy.
- Heat a grill pan over medium heat and grill halloumi slices for about 2-3 minutes per side until golden brown.
- Serve the roasted cauliflower topped with grilled halloumi and crispy chickpeas.
