- 8 slices brioche bread, cubed (about 5 cups)
- 8 oz cream cheese, softened
- 6 large eggs
- 2 cups whole milk
- 1 cup granulated sugar
- 2 tsp vanilla extract
- Zest of 2 lemons
- Juice of 2 lemons (about 1/4 cup)
Instructions
- Preheat your oven to 350°F (175°C). Grease a large baking dish.
- Place cubed brioche evenly in the greased dish.
- In a bowl, whisk together eggs, milk, sugar, lemon zest, lemon juice, and vanilla until combined.
- Beat cream cheese in another bowl until smooth; gradually mix in some custard mixture until fully blended. Fold back into the main custard.
- Pour the custard over the brioche cubes and press down gently to ensure they are soaked.
- Cover with foil and bake for 30 minutes; remove foil and bake for an additional 15-20 minutes until golden brown.
