  • 3 Pounds Beef Stew Meat (or Lamb)
  • 1/4 Cup All Purpose Flour
  • 2 teaspoons Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 2 teaspoons Fresh Rosemary
  • 1 teaspoon Dried Thyme
  • 4 Cups Beef Broth
  • 5 Each Carrots (peeled and cut into chunks)
  • 1 Cup Frozen Peas
  • 2 Each Bay Leaves
  • Mashed Potatoes

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat.
  2. In a Ziploc bag, combine beef stew meat, all-purpose flour, salt, pepper, garlic powder, onion powder, rosemary, and thyme. Shake until well coated.
  3. Sear the meat in the hot oil until browned on all sides.
  4. Gradually stir in beef broth while mixing to combine flavors. Add chopped carrots and bay leaves.
  5. Bring to a boil, then reduce heat to medium-low and cover. Simmer for about 45 minutes, stirring occasionally.
  6. Add frozen peas five minutes before serving.
  7. Remove bay leaves before serving hot with creamy mashed potatoes.
