- 2 cups graham cracker crumbs

- ¾ cup all-purpose flour
- ½ cup brown sugar (for topping)
- ½ teaspoon cinnamon (for topping)
- ½ cup cold unsalted butter, cubed (for topping)
Instructions
- Preheat oven to 350°F (175°C). Combine graham cracker crumbs, melted butter, and granulated sugar; press into a springform pan. Bake for about 10 minutes.
- Beat cream cheese until smooth. Add sugar and vanilla; mix well. Incorporate eggs one at a time, then fold in sour cream.
- Pour cheesecake filling over crust. In another bowl, mix diced apples with brown sugar, cinnamon, cornstarch, and lemon juice; layer over cheesecake.
- For the crumble topping, mix flour, brown sugar, and cinnamon; cut in cold butter until crumbly. Sprinkle on top of apples.
- Bake for about 55 minutes until set but slightly jiggly in the center. Cool completely before serving.
