- 4 salmon fillets (6 oz each)
- 1/2 cup bourbon
- 1/4 cup low-sodium soy sauce
- 2 tbsp honey
- 2 ripe peaches, sliced
- 2 cloves garlic, minced
Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick cooking spray.
- In a medium bowl, whisk together bourbon, soy sauce, honey, and minced garlic.
- Place salmon fillets in a shallow dish and pour half of the marinade over them. Let marinate for about 15 minutes.
- While marinating, slice fresh peaches into wedges.
- Remove salmon from marinade (discard used marinade) and arrange it in the prepared baking dish along with peach slices. Bake for 15-20 minutes or until the salmon flakes easily with a fork.
- Drizzle remaining marinade over salmon during the last few minutes of cooking for added flavor.
