- 4 salmon fillets (6 oz each)
- 1/2 cup bourbon
- 2 ripe peaches, diced
- 2 tbsp brown sugar
- 1 tbsp Dijon mustard
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together bourbon, brown sugar, Dijon mustard, and diced peaches until well combined.
- Place salmon fillets skin-side down on the prepared baking sheet and spoon the bourbon-peach mixture generously over each fillet.
- Bake for 15-20 minutes or until salmon flakes easily and reaches an internal temperature of at least 145°F (63°C).
- Let rest for a few minutes before serving. Garnish with additional peach slices if desired.
