- 1 tsp baking powder
- 3/4 cup granulated sugar
- 2 large eggs
- 1/2 cup milk (dairy or plant-based)
- 1/4 cup vegetable oil
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a blender, combine chopped spinach and milk; blend until smooth.
- In a large bowl, whisk together flour, cocoa powder, baking powder, and sugar.
- In another bowl, beat the eggs and mix in the spinach-milk mixture and oil until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined.
- Spoon the batter into prepared muffin tins and bake for 20-25 minutes or until a toothpick comes out clean.
