- 12 jumbo pasta shells
- 1 lb lean ground turkey
- 2 cups fresh spinach
- 1 cup part-skim ricotta cheese
- 1.5 cups shredded mozzarella cheese (divided)
- 2 cups marinara sauce
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Spray a baking dish with nonstick cooking spray.
- Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, brown the ground turkey until fully cooked. Add fresh spinach and sauté until wilted. Remove from heat.
- In a mixing bowl, combine the turkey-spinach mixture with ricotta cheese and half of the mozzarella. Season with salt and pepper.
- Stuff each pasta shell with the filling and place them in the prepared baking dish.
- Pour marinara sauce over the stuffed shells and sprinkle remaining mozzarella on top. Cover with foil and bake for 25 minutes; uncover for an additional 5 minutes to brown.
