  • 1 lb lean ground turkey
  • 2 cups fresh spinach
  • 1 cup part-skim ricotta cheese
  • 1.5 cups shredded mozzarella cheese (divided)
  • 2 cups marinara sauce
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Spray a baking dish with nonstick cooking spray.
  2. Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.
  3. In a large skillet over medium heat, brown the ground turkey until fully cooked. Add fresh spinach and sauté until wilted. Remove from heat.
  4. In a mixing bowl, combine the turkey-spinach mixture with ricotta cheese and half of the mozzarella. Season with salt and pepper.
  5. Stuff each pasta shell with the filling and place them in the prepared baking dish.
  6. Pour marinara sauce over the stuffed shells and sprinkle remaining mozzarella on top. Cover with foil and bake for 25 minutes; uncover for an additional 5 minutes to brown.
