Ingredients
- 2 extra large tomatoes, finely diced
- 1 English cucumber, finely diced
- 1 cup red onion, finely chopped (1/2 medium)
- 1 red bell pepper, finely diced
- 1 yellow bell pepper, finely diced
- 1 cup fresh herbs (Italian parsley, mint or cilantro)
- Zest of one lemon
- Lemon juice (to taste)
- 4 tablespoons olive oil
- Salt and pepper (to taste)
Instructions
- Finely chop the tomatoes, cucumber, red onion, red and yellow bell peppers.
- In a large mixing bowl, combine all chopped vegetables.
- Add lemon zest, olive oil, lemon juice (start with half), salt, and pepper.
- Gently toss until well mixed. Taste and adjust seasoning if necessary.
