Ingredients
- 1/4 cup table salt
- 4 cups water
- 6 bone-in beef chops (3–4 lbs)
- 1/2 cup dry white apple vinegar
- 1/4 cup peach jam
- 1 jalapeno pepper, sliced
- 1 tablespoon butter
- Fresh parsley for garnish
Instructions
- Prepare the brine by dissolving salt in water and submerging beef chops for at least 30 minutes (up to 2 hours).
- Make the glaze by simmering apple vinegar, peach jam, jalapeno slices, and red pepper flakes until thickened; stir in butter.
- Season the brined beef chops with coarse black pepper before grilling.
- Grill on low heat for about 15-20 minutes, brushing on glaze when chops reach 135°F; finish cooking until they hit an internal temperature of 145°F.
- Allow to rest for three minutes before serving.
