Instructions
- In a soup pot over medium heat, brown the ground beef until fully cooked. Drain excess fat.
- Add beef broth, heavy cream, diced tomatoes with green chilis, diced red pepper, and taco seasoning to the pot. Stir well.
- Bring the mixture to just under a boil, then reduce heat and let simmer for 10 minutes.
- Taste and adjust seasoning as desired. If needed, add more beef broth for desired consistency.
- Serve hot with toppings like shredded cheese or sour cream.
