Ingredients
- 2 large ripe avocados
- 3/4 cup key lime juice
- 1/2 cup + 2 tablespoons pure maple syrup
- 1 cup full-fat canned coconut milk
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon sea salt
- 2 tablespoons coconut oil (melted and cooled)
Instructions
- Freeze the bowl of your ice cream maker overnight.
- In a blender or food processor, add avocados, key lime juice, maple syrup, coconut milk, sea salt, vanilla extract, and melted coconut oil. Blend until smooth.
- Pour the blended mixture into the ice cream maker and churn according to manufacturer instructions until thick and creamy.
- For soft-serve consistency, serve immediately or transfer to a freezer-safe container for firmer ice cream. Freeze for about 2 hours if desired.
- Before serving, thaw for 5 to 10 minutes to enhance texture.
